Sun-dried Tomato & Spinach Pasta
This easy and flavourful Sun-dried Tomato & Spinach Pasta with feta cheese takes no time at all to cook and will soon be a staple weeknight favourite!
I love love love easy recipes, especially dinner recipes that can be made quickly during a weeknight. This Sun-dried Tomato & Spinach Pasta is perfect because all you really need to wait for are your noodles to boil. The 'sauce' itself, made up of just sun-dried tomatoes, olive oil, garlic and spinach, takes no time at all.
This is definitely more of a 'garlic and oil' based pasta, vs. a thick or creamy sauce. It's a nice change from spaghetti!
How to Make Sun-dried Tomato & Spinach Pasta
For this recipe you'll need:
fusilli pasta (I like to use brown rice pasta)
sun-dried tomatoes (I buy mine in a jar with oil)
baby spinach, or other leafy green of choice
garlic
salt and pepper
crumbled feta cheese for topping
hemp seeds for extra protein (optional)
Start by cooking your pasta per package directions. While it's cooking, sauté the minced garlic in olive oil over medium-high heat. Add in the spinach and mix until wilted. Then add in the sun-dried tomatoes, salt, and pepper. Stir. Let it cook for 5-10 minutes. Once pasta is cooked, strain then stir together with sun-dried tomato mixture. Serve with crumbled feta on top!
