Winter Chicken & Rice Stew

This simple, comforting Winter Chicken & Rice Stew is the perfect recipe for batch-cooking, enjoying for lunch, or an easy weeknight dinner.

I’ve expressed many times my love for soups and stews. They’re a go-to during the winter because they’re not only warm and comforting, but if you just throw a few ingredients into a pot or slow-cooker, they are as easy as can be to make.

I love playing around with different ingredients and flavour combinations and I definitely have a few favourite stew recipes up my sleeve, but my newest fave is this comforting Winter Chicken & Rice Stew, made with only a small handful of wholesome ingredients. This one need not take any more than an hour or so to cook. The perfect weeknight meal or weekend dinner that makes a great leftover lunch.

How to Make Winter Chicken & Rice Stew

To make this stew, you'll need:

  • chicken breast

  • carrots

  • kale

  • green beans

  • white or brown rice

  • garlic

  • basil and parsley

I like to keep the steps for this recipe simple. Toss everything into a pot, and let simmer for about 40-45 minutes. Once it's cooked and rice has absorbed a lot of the water, shred the chicken apart with two forks and stir.

 

Winter Chicken & Rice Stew

A simple, comforting stew with hearty vegetables and chicken.
Servings: 2

Ingredients

  • 2 chicken breasts

  • 2 large carrots, diced

  • 3-4 large kale leaves, loosely chopped

  • 1.5 cups green beans, ends trimmed

  • 1/3 cup rice (white or brown)

  • 1-2 cloves garlic, minced

  • 2 tbsp dried basil

  • 2 tbsp dried parsley

  • 3 cups water or just enough to cover all ingredients in pot

  • salt and pepper to taste

Instructions

  1. Chop up all veggies and add all ingredients into pot.

  2. Bring to boil and then reduce to simmer (medium-low), allowing to cook for about 45 minutes.

  3. Once cooked and rice has absorbed water to thicken into a stew, shred apart chicken breast and stir.

  4. Serve with cracked black pepper on top!
