Carrot Cinnamon Salad
This Carrot Cinnamon Salad is one of my favourites as it combines two of the best tastes: sweet and savoury.
Who wouldn't agree that summer is the best time for salads? I do love them anytime of year, but this one here is a favourite of mine and I think it's safe to say you can enjoy it any time of year.
This salad takes no more than a few minutes to whip up and you'll find all the flavours come together so nicely to create a sweet, fresh salad bowl. Also, arugula is delicious. The addition of carrots, raisins and cinnamon meld together perfectly with a creamy basil dressing to create this salad in minutes.
Carrot Cinnamon Salad
Servings: 1
Ingredients
Few large handfuls of baby arugula
1 carrot, grated
1 apple, diced
few leaves fresh basil, thinly chopped
1/4 cup raisins
1 tsp ground cinnamon
Creamy Tahini Dressing
1 tbsp sesame tahini
1/2 - 1 tbsp raw honey
2 tbsp apple cider vinegar
2-3 tbsp olive oil
1 tsp dried basil
Instructions
Place arugula in bowl or plate.
In small bowl, toss carrot, apple, raisins, cinnamon and basil until mixed evenly and place on top of arugula.
In separate small bowl, whisk all dressing ingredients and drizzle on top of salad.
Enjoy immediately!
