Kale Beet Salad

This Kale Beet Salad is full of goodness from shredded beet, fresh greens, and hearty nuts and seeds.

This Kale Beet Salad is so good and so hearty, and I love the combination of crunchy seeds, creamy avocado and the zesty ginger dijon dressing. 

 

Kale Beet Salad

Servings: 2

Ingredients

  • 3-4 kale leaves, torn into pieces

  • 1 small beet, grated

  • 1 small pear, diced

  • 1/2 avocado, diced

  • 1/4 cup pumpkin seeds

  • 1/4 cup slivered almonds

  • 1/2 tsp olive oil

Ginger Dijon Dressing

  • 1 tbsp dijon mustard

  • 1 tbsp balsamic or apple cider vinegar

  • 2-3 tbsp olive oil

  • 1 inch-piece fresh ginger, peeled and minced

Instructions

  1. In medium bowl, add torn kale leaves. Drizzle 1/2 tsp olive oil and massage kale with hands until dark green and a little limp (this breaks down the tough fibre of kale).

  2. Top with shredded beets, pear, avocado, pumpkin seeds and almonds.

  3. In separate, small bowl, whisk all ingredients for dressing until smooth.

  4. Drizzle on top of salad and enjoy immediately.
